I’m not the biggest cook in my family. Don’t get me wrong, I can cook just about anything if I needed to, but I just don’t always see the need of cooking a large meal just for myself. I’m lucky enough to have several restaurants close by my office that carry gluten free options. However, I do like to bring my own lunch to work every day for two main reasons:
- Save money
- Eat healthy
In the summer, I tend to focus on preparing salads for lunch. As the cold weather days start to out number the warm weather ones, I find myself craving lunches that not only fill me up but warm me up, too. Soup is my favorite (and go-to) lunch of choice over the fall and winter months. Many of you many know that it’s not always easy to find gluten free soup options at the grocery store that are both healthy and delicious. When you are lucky enough to find a great gluten free soup, it can be way overpriced.
That’s when I found Dr. McDougall’s Ready to Serve collection of soups. Almost the entire collection of soups is gluten free with the exception of the Minestrone (because of the noddles). They offer everything from Garden Vegetable and Split Pea to Lentil and Black Bean soups for your taste. Personally, I usually have a rotation of Garden Vegetable, Lentil and Roasted Red Pepper throughout the week.
